This keto chicken parm is a weekly staple because it's healthy, delicious, and fast, a necessity for those buy nights.

Ingredients

  • 1 pound of chicken tenders
  • 2 tablespoons of Dijon mustard
  • 1 - 1 1/2 cups of freshly grated parmesan cheese. Use the large grate side of your grater. Otherwise the cheese melts away too much.
  • 1 head of romaine lettuce, chopped
  • 1/2 head of iceberg lettuce, chopped
  • 4 campari tomatoes, diced
  • 2 scallions, diced
  • 1/2 of an English cucumber, diced
  • 1/4 jar of roasted red peppers, diced

Instructions

  1. Preheat oven to 400 degrees
  2. Brush chicken tenders with Dijon mustard on both sides.
  3. Coat chicken tenders with parmesan on both sides. Lightly press cheese into mustard so it sticks to the chicken.
  4. Put chicken in oven and cook through. In my toaster oven it takes about 17 minutes.
  5. Make salad. You can add or subtract any salad ingredients you enjoy.
  6. Lay cooked chicken onto or beside your salad. I drizzle lemon balsamic on mine. Yum!
  7. Serve and enjoy!
